In a saucepan, combine the sliced peaches, ginger, and water. Bring the mixture to a boil over medium heat.
Once the water is boiling, reduce the heat to low and simmer for 5 minutes to allow the flavors to infuse. Stir occasionally and gently mash the peaches with a spoon to release their juices.
Remove the saucepan from heat and add the black tea bags. Let the tea steep for 3-5 minutes, or until it reaches your desired strength. Remember, the longer you steep, the stronger the tea will be.
Once steeped, remove the tea bags and strain the mixture to remove the peach and ginger pieces. Discard the solids and let the tea cool to room temperature.
Transfer the tea to a pitcher or individual serving glasses filled with ice cubes. If desired, add honey or sweetener of your choice to taste and stir until dissolved.
Garnish with fresh mint leaves, if desired, for an extra refreshing touch.
