Ingredients
  

  • ¼ cup tapioca pearls boba
  • 1 cup water for boiling the boba
  • ½ cup passion fruit pulp fresh or canned
  • 1 cup brewed green tea, cooled
  • 2 tbsp sugar or honey
  • ½ cup water or additional green tea (for diluting the passion fruit pulp, if needed)
  • A few mint leaves for garnish

Instructions
 

  • Bring 1 cup of water to a boil in a medium saucepan. Add the tapioca pearls and cook according to the package instructions, usually for about 15-20 minutes, until they are tender and fully translucent.
  • Once the boba is cooked, drain and rinse under cold water to stop the cooking process. Sweeten the boba by mixing in 1 tablespoon of sugar or honey while they're still warm. Set aside.
  • In a pitcher or bowl, combine the passion fruit pulp with the brewed green tea. If the pulp is very thick or concentrated, dilute it with 1/2 cup of water or additional green tea until you reach a desired consistency.
  • Add the remaining sugar or honey to the passion fruit mixture, adjusting the sweetness according to your taste. Stir well until the sweetener is fully dissolved.
  • Fill a serving glass about halfway with ice cubes. Add the sweetened boba pearls to the glass.
  • Pour the passion fruit and tea mixture over the boba and ice, stirring well to ensure the flavors are well combined.
  • Optionally, garnish the drink with a few mint leaves to add a refreshing aroma and a pop of color.
