Sugar for caramelizing
Instructions
Heat cream and jasmine tea leaves over medium heat until steaming. Steep for 10 minutes and strain.
Whisk sugar and egg yolks until pale. Gradually add the cream while whisking.
Pour the mixture into ramekins and place them in a baking dish with water halfway up the sides.
Bake at 325°F (165°C) for 35-40 minutes.
Cool, then sprinkle sugar on top and caramelize with a kitchen torch before serving.
