Jasmine Tea Crème Brûlée

Ingredients
  

  • 2 cups heavy cream
  • 1 tbsp jasmine green tea leaves
  • cup sugar
  • 4 large eggs
  • ¼ tsp vanilla extract
  • Sugar for caramelizing

Instructions
 

  • Heat cream and jasmine tea leaves over medium heat until steaming. Steep for 10 minutes and strain.
  • Whisk sugar and egg yolks until pale. Gradually add the cream while whisking.
  • Pour the mixture into ramekins and place them in a baking dish with water halfway up the sides.
  • Bake at 325°F (165°C) for 35-40 minutes.
  • Cool, then sprinkle sugar on top and caramelize with a kitchen torch before serving.
