Instructions
Preheat oven to 375°F (190°C). Grease a madeleine pan.
In a bowl, beat the eggs and sugar together until pale and fluffy.
Add vanilla extract and lemon zest if using.
Sift together flour and baking powder, then fold into the egg mixture.
Gently fold in melted butter until smooth.
Spoon the batter into the madeleine molds and bake for 10-12 minutes until the edges are golden.
