Ingredients
  

  • ½ cup unsalted butter melted
  • cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • zest of 1 lemon optional

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a madeleine pan.
  • In a bowl, beat the eggs and sugar together until pale and fluffy.
  • Add vanilla extract and lemon zest if using.
  • Sift together flour and baking powder, then fold into the egg mixture.
  • Gently fold in melted butter until smooth.
  • Spoon the batter into the madeleine molds and bake for 10-12 minutes until the edges are golden.
