  • 2 rooibos tea bags
  • ½ cup coconut milk
  • ½ tsp ground cinnamon
  • 1 tbsp honey or sweetener of choice (adjust to taste)

Instructions
 

  • Bring 2 cups of water to a boil. Remove from heat and add the rooibos tea bags.
  • Let the tea bags steep for about 5-7 minutes to infuse the water with the rooibos flavor.
  • In a small saucepan, heat the coconut milk over medium heat.
  • Do not boil; just heat it until it's warm.
  • Once warmed, remove from heat and whisk in the ground cinnamon.
  • Remove the tea bags from the brewed rooibos tea.
  • Divide the brewed tea evenly between 1-2 cups.
  • Pour the warmed coconut milk mixture into the cups, stirring gently to combine with the tea.
  • Sweeten the latte with honey or sweetener according to your taste.
  • If desired, top with a dollop of whipped cream and a sprinkle of ground cinnamon.
